What it is
The oldest cultivated wheat there is — grains were found in the stomach of Ötzi, the man frozen in an Alpine glacier five thousand years ago. Haute Provence still grows it, and it has never been crossbred into anything modern.
In the kitchen
Cook the whole grains like rice, in twice their volume of water. As a flour it barely rises — blend it with a stronger one.
