What it is
Wheat that has been parboiled, dried and cracked — one of the oldest processed foods known, described in Hittite and Babylonian texts. The precooking is why it needs only soaking, which mattered enormously where fuel was scarce.
In the kitchen
Fine bulgur for tabbouleh needs no cooking at all — the lemon juice and tomato water soften it. Boiling it makes porridge.
