What it is
It absorbs about three times its volume in liquid while staying separate — the opposite of risotto rice, and exactly what paella needs, since the grains must never be stirred or turn creamy. It is slow to grow and low-yielding, hence the price.
In the kitchen
Spread it in a thin layer and do not touch it. The prized socarrat is the crust that forms only if the rice is left alone.
