What it is

Chinese tradition calls it forbidden rice, reserved for the emperor and denied to everyone else — a story that may be embroidered, but the rarity was real. The colour is anthocyanin, the same pigment as blackcurrant and red cabbage.

In the kitchen

It bleeds violet into everything it touches. Cook it separately if you want the rest of the plate to keep its colour.
