What it is
The name means fragrant in Hindi, and the aroma comes from a compound also found in pandan leaf and fresh bread. Unusually for rice, it is aged a year or more before sale — the drying intensifies the perfume and makes the grains elongate further.
In the kitchen
Rinse until the water runs clear, then soak thirty minutes. The grains double in length rather than swelling fat.
