What it is
The creaminess of a risotto is not cream but amylopectin, a starch that leaches out of these short fat grains as they are stirred. Arborio holds a firm core longest, which is why it forgives an inattentive cook.
In the kitchen
Never rinse it. Washing removes exactly the surface starch that makes the dish work.
