What it is
Named for the colour of the milled grain rather than any scent of jasmine — Thai calls it hom mali, fragrant jasmine-white. Unlike basmati it is best fresh from the harvest, and Thai cooks pay attention to the crop year.
In the kitchen
Use less water than the packet says, roughly one and a quarter to one. It is stickier than basmati and floods easily.
