What it is
Domesticated some ten thousand years ago, rice now feeds half of humanity every single day. In Japanese, the word for cooked rice — gohan — is simply the word for “meal”: the grain and the act of eating are the same idea.
In the kitchen
Rinse until the water runs clear for distinct grains; skip the rinse when you want creaminess, as in risotto or rice pudding.
