What it is
Not rice at all but an aquatic grass, and it is sacred to the Anishinaabe, who call it manoomin and still harvest it from canoes by knocking the grain into the boat with wooden sticks — a method protected by treaty.
In the kitchen
It takes forty-five minutes and is ready when the grains split open and curl. Undercooked it is simply inedible.
