What it is
Toasted, it becomes kasha, the grain of the Russian and Ashkenazi table, and the toasting is not optional — raw groats cook to a grey mush while toasted ones stay separate and smell of hazelnut.
In the kitchen
Coat the groats in beaten egg and dry them in the pan before adding liquid. That is the classic trick to keep every grain separate.
