What it is
Brittany calls it blé noir, black wheat, though it is neither wheat nor a grass — it is a relative of rhubarb and sorrel. It grew where wheat would not, on poor acid soil, which is exactly why Brittany built a cuisine on it.
In the kitchen
It has no gluten, so a galette batter needs resting overnight for the starch to swell and hold together in the pan.
