What it is
The legal flour of the baguette de tradition française, a 1993 decree that fixed what a real baguette may contain: flour, water, salt, yeast and nothing else — no additives, no freezing. The law was written to stop the industrial loaf.
In the kitchen
Its extra bran feeds fermentation, so doughs rise faster and taste more. Hold back a little water at first — it drinks less than it looks.
