What it is
Fonio has been farmed in West Africa for some five thousand years; in Dogon cosmogony the grain is po, the seed from which the universe was made. The grains are minute, and hulling them by hand is what kept the crop from travelling.
In the kitchen
Rinse it twice - unwashed fonio carries sand - then one part grain to two of boiling water, covered, off the heat, three minutes, and fork it through. Stirring while it swells turns it to paste.
