What it is
The French T number counts ash left after burning a hundred grams of flour — T45 leaves 0.45%, meaning almost no bran. It is the whitest, finest flour milled, and the reason a croissant can be laminated into hundreds of leaves without tearing.
In the kitchen
Use it for viennoiserie and delicate cakes, never for bread — it has too little protein to build a proper gluten network.
