What it is
White flour was a luxury for most of history precisely because removing the bran is work. Then the roller mill arrived in the 1870s, white bread became cheap, and within fifty years wholemeal had been reinvented as the expensive, healthy one.
In the kitchen
The bran cuts gluten strands like tiny blades. Rest the dough half an hour before kneading and it hydrates enough to stop tearing.
