What it is
Wheat harvested green and set on fire — the high moisture in the young grain stops it burning while the chaff and husk char away. A thirteenth-century Baghdad cookbook already records it, and the smoke is the entire flavour.
In the kitchen
Rinse it well and pick it over — charred fragments and small stones are common even in good packets.
