What it is
A Mexican bird that English speakers named after Turkey and the French after India — dinde, from poule d'Inde — because both assumed anything exotic came from somewhere east. Neither guess was even close.
In the kitchen
Brine it or cook the legs and breast separately. They want temperatures forty minutes apart and no roasting method reconciles them.
