What is in season in January

26 ingredients with a short season — three months or less — are at their best in January in France. Not only fruit and vegetables: the fish, the mushrooms, the game and the cheeses have a season too.

January is the month the feast leaves the table. The goose, the poularde, the boudin blanc and the cotechino are all in their last weeks, and so are the clementines, the yuzu and the Buddha's hand. What arrives instead is small and sharp: bitter oranges for marmalade, rapeseed flowers, forced rhubarb grown in the dark. Cook the chicories while you can — the Rosa di Gorizia is at its best now and gone by February.
