17 ingredients with a short season — three months or less — are at their best in February in France. Not only fruit and vegetables: the fish, the mushrooms, the game and the cheeses have a season too.

The thinnest month of the year, and it shows: seventeen things. The black truffle finishes here, and with it the fugu milt and the two cured sea-cucumber roes, konowata and kuchiko. Against that, the first green of the year is already pushing — fuki-no-tō through the snow, wasabi flowers, wild leeks between the vines. Violets, and the desert truffle after rain in the Maghreb.
