What it is

Leatherwood grows nowhere but the wet west of Tasmania, and it supplies roughly seven tenths of all the honey the island produces; hives are trucked to forestry-road camps for the January flowering. The trees take decades to come into full flower, so the crop rests on forest nobody can replant on a beekeeper's timescale.

In the kitchen

It bullies whatever it is mixed into, so start at a third of the honey a recipe asks for and taste upward. Keep it off the heat — the perfume is the whole point and it cooks straight out.
