What it is
Brillat-Savarin called it “the diamond of the kitchen”. For centuries pigs hunted it — too well, since they ate their finds — until trainers switched to dogs, who trade the black nugget for a biscuit without regret.
In the kitchen
Never cook it hard: shave it over warm eggs, pasta or potatoes at the last second. Store it with your eggs — the perfume passes through the shell.
