What it is
Separated from Tuber gibbosum as a species of its own only in 2010, the Oregon winter white grows under planted Douglas fir on cutover ground rather than in old forest. Raking a patch strips it for years, so the harvest has largely moved to dogs, which take only the ripe ones and leave the rest to finish.
In the kitchen
The aroma is gone within a week of lifting, so buy it dated and shave it raw over something hot and fatty — egg, potato, butter. Cooking it is throwing it away.
