What it is
A by-product of winemaking — the pomace left after pressing holds seeds that would otherwise be waste, and it takes roughly forty kilos of grapes to yield a single litre. Nothing in a vineyard is thrown away twice.
In the kitchen
Its very high smoke point and clean taste make it the right oil for mayonnaise and for searing, where olive oil would dominate.
