Huile de chanvre

What it is

France grows more industrial hemp than any other country in Europe, most of it for paper and insulation; the seed oil is the by-product that found its way into kitchens. Its green is chlorophyll, which is also why a bottle left in the light fades and turns fishy.

In the kitchen

Never heat it — it breaks down below 165 °C. Keep it in the fridge and finish the bottle within three months of opening; past that it tastes of fish.
