What it is
Sweeter and rounder than walnut oil, and rarer, because hazelnuts give less oil for the same weight. Piedmont uses it where Provence would reach for olive, and it turns a plain green salad into something that tastes cooked.
In the kitchen
A teaspoon at the end of a soup or a purée does more than a whole spoonful of butter. Add it off the heat.
