What it is
Grappa was sold by the demijohn as a peasant spirit until 1973, when the Nonino distillery ran a single grape variety, Picolit, on its own and bottled it like a wine; every single-varietal grappa since dates from that one decision. The law asks for Italian pomace distilled in Italy, and the fresher the marc reaches the still, the more flowers and the less earth end up in the glass.
In the kitchen
Serve it and cook with it cool, around 10 °C for a young one, or it reads as nothing but spirit. Off the heat, a spoonful stirred into a risotto at the mantecatura lifts the whole dish; boiled into it, the same spoonful turns bitter.
