What it is
Lo floc is Gascon for a bouquet of flowers, and the appellation, recognised in 1990, is the region's own mistelle: fresh must muted with Armagnac from the same estate. Armagnac is distilled once, at low strength, and keeps more of the grape than Cognac does — which is why Floc arrives with prune and rancio weight where Pineau stays bright.
In the kitchen
Deglaze duck or magret with it and drop in two prunes to swell in the reduction; the sauce will need no added sugar afterwards. Serve the rest very cold, 6 to 8 °C, as the Gascons do before the meal.
