Eau-de-vie de framboise

What it is

Raspberries carry so little sugar that fermenting them yields barely any alcohol, so most framboise is not fermented at all: the fruit is steeped in neutral spirit and the whole macerate is then distilled. Something like twenty-five kilos of berries stand behind a single litre, which is the whole explanation for the price.

In the kitchen

It perfumes without sweetening: two teaspoons into a litre of sorbet base once it has cooled and no more, or the alcohol will keep the sorbet from setting firm. Never let it boil.
