What it is

Almost always sweetened before drying, because an unsweetened dried cranberry is close to inedible — the fruit is far too acidic. Read the label: many are sweetened with apple juice concentrate rather than sugar, and they taste different.

In the kitchen

Their acidity cuts fat, which is why they work in a stuffing or a grain salad far better than raisins do.
