What it is
Morello cherries are dried without the sugaring that sweet cherries get, so the acid concentrates alongside the sugar instead of being buried under it. They are a separate species from the sweet cherry and self-fertile, which is why one griotte tree in a garden fruits where a lone sweet cherry often will not.
In the kitchen
Plump them twenty minutes in warm red wine or kirsch, then tip the soaking liquid into the pan sauce — that is where most of the acid ends up. A tablespoon of them in a duck or venison sauce replaces the vinegar outright.
