What it is
Grown in China for centuries as a medicinal ingredient in soups and teas rather than a snack — it is in the same family as the tomato and the aubergine. Its Western career as a superfood dates only to the early 2000s.
In the kitchen
Simmer them in a broth or a congee the way Chinese cooks do. Eaten dry by the handful they are leathery and sour.
