Pitaya

What it is

It is the fruit of a climbing cactus whose flower opens for a single night and is pollinated by bats and moths. Commercial growers in Vietnam light their fields after dark to trick the plant into flowering out of season.

In the kitchen

Expect looks rather than flavour — it is mild by nature. Lime, and serving it very cold, are what make it worth eating.
