What it is
The name means roughly date of light: hold one up to a lamp and the amber flesh goes translucent around the stone. It comes from the Tolga oases of Biskra in Algeria and spread from there to the Tunisian Djerid, and it is still sold in France on the branch each December.
In the kitchen
At about 20 percent water against a Medjool’s 30, it slices without smearing and holds its shape through an hour in a tagine. Do not substitute it into a date paste — it stays granular however long you blend it.
