What it is
Not the water that sloshes inside the nut, but the cream pressed from its grated flesh — the invention of every coconut coast at once. In Thai and Indian kitchens it plays the role butter and cream play in France: the velvet that carries the spices.
In the kitchen
Don’t shake the tin: the thick cream on top is for frying your curry paste, the thin milk below for simmering.
