What it is
The husk is a flotation device: a coconut can drift on ocean currents for months and still germinate on landfall, which is how it colonised nearly every tropical coast before any boat carried it. The three dark spots are germination pores.
In the kitchen
One of the three eyes is soft. Push a skewer through it to drain the water before you crack the shell.
