What it is
The true féra of Lake Geneva, Coregonus fera, was last seen around 1920 and is gone, taken by overfishing and by the lake's own enrichment. Everything sold as féra on the Léman today descends from coregonids restocked out of Neuchâtel and Constance, so the name has outlived the fish it named.
In the kitchen
The fillet is lean and thin and leaves no margin: three minutes skin down in foaming butter, one minute over, finished. Flour it as it goes into the pan and not before — flour left to sit on that wet skin turns to paste.
