What it is
Sea trout and brown trout are one species: in a single river some individuals drop down to the sea, grow far larger on marine feed and return silver, and their own offspring may do either. The coral colour is dietary, from crustaceans, and fades as the fish waits in fresh water to spawn.
In the kitchen
It has less fat than salmon and no margin for error. Cure it forty minutes in equal salt and sugar, rinse, then cook to just-set at 45 °C — or serve it raw; a hot pan turns it to sawdust.
