What it is
It is born symmetrical, swimming upright like any fish, and then one eye migrates across the skull over a few weeks until both sit on the same side. The orange spots are unmistakable and fade within hours of death.
In the kitchen
It is thin and cooks in three or four minutes. Flour, butter, lemon — anything more elaborate buries it.
