What it is

Styria grows a mutant squash whose seeds have no husk at all — a single natural mutation recorded in the 1870s, which is why Austrian pepitas are dark green and naked while everyone else's need shelling.

In the kitchen

Toast them until they pop and puff. That is the moment they are done, and it happens fast.
