What it is
The French name is a portmanteau of potiron and marron — pumpkin and chestnut — and it is an accurate tasting note rather than a marketing one. It arrived from Japan, where it is called uchiki kuri, and took over French markets in a generation.
In the kitchen
Do not peel it. The skin softens completely in cooking and carries most of the chestnut flavour.
