What it is
Central Europe grinds them into a sweet paste for strudel and beigli, which is a different food from the whole seeds scattered on a bagel. It takes roughly three thousand seeds to make a gram, and the plant is the opium poppy.
In the kitchen
Grind them or soak them in hot milk before baking. Whole and dry they contribute crunch and almost no flavour.
