What it is
The Queen of Sheba is said to have claimed her land’s whole pistachio harvest for her court. In Persia, lovers met under pistachio trees on moonlit nights: hearing the shells crack open was a promise of good fortune.
In the kitchen
The greener the kernel, the finer the pistachio — Sicily’s Bronte and Iran’s best are almost emerald. Crushed, they finish anything creamy with style.
