What it is

Domesticated in what is now the United States some four thousand years ago, then taken to Russia, industrialised, and sold back to America as a Russian crop. The head follows the sun only while growing; a mature flower faces east and stops.

In the kitchen

Toast them and they stop tasting like birdseed. Untoasted they contribute texture and very little else.
