What it is
Ground sesame and nothing else, and it does something counterintuitive: stir water into it and it seizes and thickens before suddenly loosening into a pale, smooth cream. Cooks who do not expect that throw away the first batch.
In the kitchen
Keep adding the water through the seizing stage. It always comes back, and it takes far more water than seems possible.
