What it is

The Russian Orthodox Church banned most fats during Lent but had never heard of the sunflower, so it escaped the list — and by the nineteenth century Russia was pressing it by the shipload. A loophole created an industry.

In the kitchen

Its neutrality and high smoke point make it the default frying oil. Do not use it where you want the fat to taste of something.
