What it is
Two entirely different products share the name: the pale oil from raw seed, used for frying, and the dark oil from toasted seed, which is a seasoning and not a cooking fat at all. Buying the wrong one ruins the dish either way.
In the kitchen
Add it at the very end, by the half-teaspoon. Heated, its whole aroma burns off within seconds.
