What it is
Bran is what is stripped from brown rice to make it white - about eight per cent of the grain, and nearly all of its fat, so the oil is a by-product of polishing. It carries gamma-oryzanol, an antioxidant that slows the oil breaking down in a fryer, which is why tempura counters top the pot up rather than empty it.
In the kitchen
Fry tempura at 175-180 °C, with a spoonful of toasted sesame oil per litre for aroma - the sesame flavours without pulling the smoke point down far. It foams very little, so the pot can be filled closer to the rim than with a seed oil.
