What it is

So dark it looks black in the bottle and bright green in a thin film — an optical effect called dichromatism, rare in food. Styria protects it with a European designation, and the seeds come from a squash that grows without a husk.

In the kitchen

Austrians pour it over vanilla ice cream, and it is not a joke — the toasted, salty note against cold cream works.
