What it is
Cheddar is a verb before it is a place: to cheddar is to stack and turn slabs of curd so the whey presses out and the texture goes fibrous. The caves of Cheddar Gorge did the ageing. The technique travelled so well that most cheddar in the world has never been near Somerset.
In the kitchen
Age is everything here. Anything under a year is a sandwich cheese; past two it develops crystals and a genuine sharpness.
