What it is
A tall white cylinder that keeps a chalky, faintly sour core long after the outside has turned to cream — the two textures in one mouthful are the point. Its home sits on the Champagne border, and the local pairing has never needed defending.
In the kitchen
Buy it young if you want the chalk. Fully ripe it is uniformly soft, and the contrast that makes it interesting is gone.
